I shared my Slow Cooker Chicken & Black Bean Salsa Taco Salad recipe a few backs on another blog I published and it was a huge hit. I’ve been asked numerous times for the recipe since, because it’s just THAT good, so I thought I’d share it here today! I even found the old photos!

And if you’re looking for a delicious and hearty, but healthy dinner idea that takes very little effort to prepare, you have come to the right place!

What You’ll Need:

  • 1 pound skinless, boneless chicken breast (I usually use frozen)
  • 1/2 tbsp. Chili Powder
  • 1/4 tsp. Garlic Powder
  • 1/4 tsp. Oregano
  • 1/2 tsp. Paprika
  • 1 1/2 tsp. Cumin
  • 1 tsp. Black Pepper
  • 1/2 tsp. Red Pepper Flakes
  • 1 can Black Beans, drained & rinsed
  • 1 cup Chunky Mild Salsa
  • 6 cups chopped Romain Lettuce or Spring Lettuce Mix
  • Dressing of choice and any desired toppings (ex. cheese, croutons, avocado)

Step 1: Place the chicken in the bottom of 6 quart or larger slow cooker and coat the chicken with the above mentioned seasonings.

Step 2: Open the can of black beans and pour them into a calendar in the sink. Thoroughly rinse the black beans with cold water to remove excess sodium and that slimy texture canned beans often have. If you use home cooked beans, you can skip this step.

Step 3: Add the black beans to the slow cooker and top with the cup of salsa.

Step 4: Place the lid on the slow cooker, and for best results, allow the mixture to cook on LOW for 6 hours. If you’re in a hurry, you can turn the slow cooker to HIGH for 4 hours.

Step 5: Once the chicken has fully cooked, use two forks to shred the chicken inside the slow cooker, and stir so that the chicken, beans and salsa are evenly dispersed throughout.

Step 6: Place 1 to 2 cups of lettuce in a bowl and top with 3/4 cup of the chicken, bean and salsa mixture.

Step 7: Top the salad with your favorite toppings and enjoy!
